GLUTEN-FREE SWEET AND SEEDY SLICE


Full of seeds and dried berries, cacao nibs and honey, tahini and coconut, our Sweet and Seedy Slice is a healthy way to hit your sweet tooth.

It’s the perfect balance – no sugar; no dairy; no gluten; no egg; no skill required; no standing for hours in the kitchen and no guilt after eating.

We can’t really ask for more than that – except for another piece – and maybe a toothpick for those pesky chia seeds.

SWEET AND SEEDY SLICE

Makes around 50 x 3cm squares

65 gm cacao butter
160 gm tahini
250 gm honey
1 teaspoon pure vanilla extract
1 teaspoon salt
320 gm pumpkin (pepita) seeds
300 gm sunflower seeds
90 gm chia seeds
80 gm linseeds
60 gm goji berries
60 gm barberries
65 gm cacao nibs
60 gm desiccated coconut

Line an 18cm x 28cm (or equivalent) tin with non-stick baking paper.

Heat cacao butter in a small saucepan over a low heat until melted.

Add tahini, honey and vanilla and stir until well combined.

Place all other ingredients into a bowl and pour over cacao butter mixture. Mix well and transfer to the prepared tin. Press down firmly and smooth the top. Cover with a sheet of non-stick baking paper and weigh down with a large book or similar.

Refrigerate overnight.

Remove from fridge and turn out onto a cutting board. With a hot knife cut into desired pieces.

Store in the fridge.
