GLUTEN-FREE YUZU SAKE SPRITZ
With Christmas approaching and New Year just around the corner we're anticipating that there may be some celebrations afoot.
And while we will be sending you some recipes for a cocktail party or two, you might like to think about something different to drink.
So when the time comes after you’ve cleaned the house, done all the food shopping and preparing and the guests are about to walk in the door why not fix yourself a big jug of spritz to share with the grown- ups?
An icy glass of our Yuzu Sake Spritz might be just the welcoming, refreshing drink you need to say “Let’s celebrate.”

YUZU SAKE SPRITZ
Makes 10
Ice cubes, large and small
400 ml yuzu sake, or more to taste
1 litre yuzu soda, or plain soda
500 ml strained fresh orange juice
100 ml sugar syrup
3 limes, 1 halved for squeezing, 2 in half slices
10 small leaf stars made from yuzu, makrut lime or lemon leaves, optional
Ensure all ingredients, plus 10 glasses and a large jug are chilled.
Place some large ice cubes in the jug then add the yuzu sake, yuzu soda, orange juice and sugar syrup. Squeeze in some lime juice.
Stir to combine.
If decorating, make small slits in the lime slices and leaf stars and slide onto the glass rims.
In each glass place 3-4 small ice cubes, a slice of lime and pour in some of the spritz.
Serve without delay.
TIPS:
Embed some ice cubes with lime slices and citrus leaves.
Star shaped leaves are made by pressing a cookie cutter into washed citrus leaves. We use lemon leaves for large shapes and makrut leaves for small shapes.
Sugar syrup is made by combining equal amounts of sugar and water, stirring over medium heat to dissolve the sugar and then simmering for 5 minutes. Cool and then refrigerate in a sterilized jar. It will keep for months in the fridge.
