We’ve posted a few citrus-based recipes recently but given that lemons, oranges and grapefruits are in season right now we know you’ll allow us to post one more. After all, it is winter in the southern hemisphere and vitamin C is supposed to be good to ward off colds and the flu.
So here is a classic lemon delicious pudding with a touch of lime. It is light and fresh tasting and perfect to serve after a hearty meal on a chilly winter’s night with lashings of cream. Indulgent, yes, but think of the good it is doing you.

LEMON AND LIME DELICIOUS
Serves 4-6
60 gm unsalted butter
165 gm caster sugar
55 gm Revenge G-F Plain Almond Flour (see below) or use any other g-f plain flour
1 teaspoon g-f baking powder
2 eggs, separated
50 ml strained lemon juice
25 ml strained lime juice
Zest of one lemon and one lime
375 ml milk
Cream to serve
Preheat oven to 175°C. Butter a 1.5 litre ceramic baking dish.
Beat the butter and sugar together until well combined.
Combine the flour and baking powder and then stir it into the butter sugar mix. Beat in the egg yolks one at a time.
Add the juices and zest and stir gently to combine. Pour in the milk slowly, stirring gently between each addition. The mix will be very liquid.
Whisk the egg whites until they are stiff and fold evenly through the mixture.
Pour into the prepared dish and bake for 40-45 minutes.
Stand for about 15 minutes before serving with lots of cream.

280 gm fine white rice flour
175 gm corn flour
