GLUTEN-FREE GREEN HERB SAUCE
with Crudités.

Take a selection of your favourite raw and cooked vegetables such as celery, fennel, carrots, capsicums, asparagus, cherry tomatoes and cucumbers and dip them, no smother them, in our gloriously unctuous Green Herb Sauce.

GREEN HERB SAUCE
Makes approximately 330gm.
30 gm white miso
35 gm Dijon mustard
30 gm hot English Mustard
35 ml lemon juice
10 gm flat-leaf parsley, leaves only
10 gm French tarragon, leaves only, or chervil
230 ml olive oil
Sea salt and ground pepper to taste
Combine all ingredients in a blender until just emulsified.
Store in a sterilized jar in the fridge.
Serve in a bowl with a platter of raw and cooked vegetables.
