DOUBLE YOKER
Coming home after two yoga classes, back to back, yesterday I decided something quick and simple was in order for dinner. And even if it was just a salad with an egg, it was completely delicious.
I had some lovely nutty, peppery rocket, some speck, guanciale (cured pigs jowl), pecorino, cucumbers, asparagus, tomatoes (not in the fridge though) and eggs. Always have good, organic or biodynamic eggs.
Prepare the salad ingredients first: tear the rocket, quickly blanch the asparagus, slice the tomatoes and cucumber and combine. Then fry the lardons of speck and guanciale till they’re crisp and pour the lot, including the warm fat, over the salad along with some extra virgin olive oil and red and white wine vinegars to make for a really delicious dressing - salty and unctuous and probably a bit naughty.
Then add a couple of softly poached eggs and pecorino shavings to top it off. There’s nothing new about it, but it was easy and tasty. And I noticed that one of my eggs was a double-yoker … after double yoga… it kept me quietly amused.
