When we were testing this Gluten-free Date Slice recipe, we all agreed it reminded us of our childhood.
Was it the coconut, the dates, the golden syrup, the lovely sweet and chewy texture or did it just remind us of that lovely smell of sweet baking in the family kitchen.
Whatever the trigger and with this week being Coeliac Awareness week and coeliac disease effecting many children as well as adults we thought we’d offer a recipe for young and old.
Our Gluten-free Date Slice is a very simple but delicious recipe which everyone will love. From grandchildren to grandparents, if you can hold a spatula you can make it.

GLUTEN-FREE DATE SLICE
125 gm Revenge Gluten-free Almond Plain Flour Mix
90 gm desiccated coconut
200 gm raw sugar
130 gm dates, roughly chopped
115 gm unsalted butter, melted
2 teaspoons golden syrup
1 egg, beaten
Preheat oven to 180°C. Line a 14cm x 24cm tin with baking paper.
Combine dry ingredients and dates. Add melted butter, golden syrup and beaten egg. Press into the prepared tin.
Bake 30 minutes. Cut while still warm.
Dust with icing sugar or drizzle with lemon icing to serve.
Lemon Icing
¼ cup pure icing sugar
Lemon juice, strained
Sift icing sugar into a small bowl. Combine with enough lemon juice to achieve a thick pouring consistency.
